While these are not my very favorite chocolate chip cookies, they are tasty. And I love how I can eat them knowing that I am eating a nutritious snack! These cookies are grain free and sugar free! Monk fruit is a natural sweetener that is extremely low on the glycemic index. And it tastes and looks like white sugar! It’s a great alternative that my friend Megan Kelly recently introduced me to! (Just be sure to find organic ingredients to ensure you’re not getting any icky chemicals on or in your food!)

INGREDIENTS:
4 tbsp monk fruit
1 cup almond flour
1/4 tsp (aluminum free) baking soda
pinch pink salt
1/4 c chocolate chips (sweetened with stevia)
1/4 c coconut flakes (unsweetened)
1/4 two walnut pieces
1/4 cup pecan pieces
1 tbsp macadamia nut pieces
1/4 cup softened (not melted) butter
1 egg
1/2 tbs vanilla
1 tbsp milk
DIRECTIONS:
1. Preheat oven to 350 degrees.
2. Mix all ingredients.
3. Make one tbsp cookie dough balls and place on greased cookie sheet.
4. Using a fork or spoon, slightly flatten cookie balls.
4. Bake for 10 minutes.
(This recipe made 16 cookies for me.)
